So Matt and I are on somewhat of a diet...again. We go through periods of eating really healthy, then go through a week of eating whatever the hell we want because sweets and carbs are just too damn good...all the while, convincing ourselves that we'll go back to eating clean and healthy so we might as well eat it all now. Plus, we've been out of town a lot lately and we all know how difficult it can be to eat well when you're away from home. Next week, we'll be out of town again as we set out to DC for my sister's graduation, so currently, we're all about that healthy stuff.
I made these quick little bites to hold us down each day. They're really great snacks for when you get hungry in between meals as they are really filling and are way better alternatives to stuffing your face with what you're actually craving. There are only 5 ingredients and no baking is required, so it'll at least be a tad easier to choose between that pint of Ben & Jerry's or these bites!
PEANUT BUTTER + CHOCOLATE CHIP ENERGY BITES
Makes 20 Bites
2/3 cup creamy peanut butter
1 cup oats (plus a little more for rolling)
2 tbsp honey
1/4 cup semisweet chocolate chips (plus a little more for rolling)
1/4 cup flax seeds
Mix all ingredients in a bowl until well-combined.
Cover with plastic wrap and chill in the refrigerator for at least 30 minutes.
Once chilled, roll into approximately 1 inch balls.
Lay out a thin layer of oats and chocolate chips and roll the balls in the mixture. Finish off by rolling each ball between your hands to pack in the oats and chocolate chips.
Store in the refrigerator.
